Day 106 No eggs?

I wanted to make cookies today but I realized I was out of eggs.   Do you know that almost ALL cookie recipes have eggs? I had to do a major Google search to find an eggless chocolate chip cookie recipe that used regular old ingredients.

I did find one though :)  Chef Jeena makes an unusual cookie that has no eggs. I had to double the recipe since it only makes 16 cookies......that won't last long with my three little cookie monsters.  They turned out okay.  Not something I would recommend if you don't have to, but if you have an egg allergy or happen to run out like I did they are good.
